Triglycerides are the chemical form in which most fat exists in food as well as in the body. It is also the main constituent of vegetable oil and animal fats. They are formed from a single molecule of glycerol, combined with three moleculesof fatty acid. The glycerol molecule has three hydroxy1 (OH-) groups. Each fatty acid has a carboxy1 group (COOH-).
